Mum's jam tart recipe

Here is my mum's recipe - Yummy! I like this jam tart because it is really easy to make and it's very cheap. It is perfect to accompany a cup of tea. You can use any type of jam. I often use a cherry jam as it is one of my family's favorites:-) 

To make this jam tart you need:

  • 200g (7oz) unsalted butter
  • 1 cup of sugar
  • 2 eggs
  • 4 cups plain flour
  • 1 tsp baking powder
  • lemon zest
  • 400g (14oz) jam


Melt the butter, add sugar and mix well. Leave to cool. 


Then add 2 eggs, lemon zest and mix again


Add the flour, baking powder and work everything together to make a ball


Cut off 1/3 of the pastry and put it in freezer. We'll need it later to put on top of the tart
 


Press the rest of the pastry into the bottom of a baking tin. There is no need to put the pastry in the fridge before, you can use it straight away. (That's why I like this recipe!!!) And spread the jam over the top of the pastry


Now take the pastry from the freezer and grate it on top of the jam. Use a thick grater.



Preheat the oven to 180C/350F and bake the tart for 30 minutes until golden brown color.
