Perepichka (Ukrainian fried bread)

perepichka salty bread recipe

Perepichka is a slightly salty fried bread. It's an ancient Ukrainian recipe and it always reminds me of my granny :-) When we (my sister, cousin and I) were small, granny used to fry this yummy for us and we were enjoying it with fresh milk. Even today granny loves to ''treat'' us with delicious perepichka and we are always happy for it!  And yet, perepichka is perfect as a base for sandwiches - just cut it in half lengthwise, spread it with some cream cheese, put a slice of a sausage and tomato on top - and the masterpiece is ready! Bon appetit :-)

To make Ukrainian fried bread Perepichka you need:

  • 1tsp dried yeast
  • 2 eggs
  • 3tbsp oil
  • 2 cups warm milk
  • 1tbsp sugar
  • 1,5tsp salt
  • 3 cups flour (probably you'll need a little more or less, it depends on the type of the flour)

Combine warm milk, eggs (lightly beaten), oil, sugar and salt

Add flour and dried yeast

Knead the dough and let it grow for 1 hour in a warm place

Roll it out and cut out small rounds (I cut out rounds using a normal glass)

Fry perepichka in hot oil from both sides until light brown color (about 2-3 minutes for each side)

Sprinkle ready breads with some salt and enjoy them!

And here is a picture of perepichka inside :-) Soft and yummy!
