I am not a big carrot cakes lover but this cake is simply amazing. It's delicious and easy to prepare. Made with carrots, nuts and apples (and no eggs!) it's super healthy and nutritious. Ideal as a kids snack too:-)
You need:
- 100g (4 oz) peeled carrots
- 150g (5 oz) peeled apples
- 10g (1tbsp) lemon juice
- 140g (10 oz) flour
- 5g (1/2tsp) baking soda
- 3g (1/2tsp) baking powder
- 100g (4 oz) brown sugar
- 1/2tsp cinnamon
- 70g (2 fl oz) sunflower or corn oil
- 20g (1tbsp) brandy or whiskey
- 1/2 orange zest
- 60g (2 oz) nuts
Grate the carrots and apples
Mix the flour, baking soda, baking powder, sugar and cinnamon
Add oil, brandy, orange zest and lemon juice to the flour mixture and mix well
Grind the nuts in a blender
And add them to the flour mixture
Combine the carrots and apples with the flour and nuts mixture and stir well until all the ingredients are well mixed
Put the pastry in a baking pan and bake for 45 minutes at 180C/350F
