Rice and salami soup with cheese triangles

In Ukraine we usually eat soups as a first course. We've got so many soup recipes that I can't even count them all! Since I moved to Italy I've got used to pasta and risotto but anyway soups are always in my heart (and stomach eh eh), and I cook them rather often for my Italian husband too. Here is one of our favorite recipes - a creamy rice and salami soup with cheese triangles :-) 

To make this soup you need:
(For 4 portions):
  • 3 medium potatoes
  • 1 big carrot
  • 100g rice
  • 1 onion
  • 4 cheese triangles
  • 200g (7oz) salami
  • salt, black pepper
  • parsley


Cut potatoes in small cubes


Grate 1/2 carrot


Bring 5 cups of water to boil, add potatoes and grated carros. As soon as it starts boiling again add the rice


Cut the onion and 1/2 carrot in small pieces and fry them in some oil for 5 minutes


Cut salami in small pieces as well


Put salami, fried onion and carrot to the boiling soup and cook until the rice is ready (about 20 minutes)


Add cheese triangles and stir well until they melt completely, add salt and black pepper


Decorate your soup with some fresh parsley and bon appetit! Thank you for the visit :-)
