When it's sunny outside food should be bright too! This smoked salmon and zucchini quiche is just the right thing :-) Delicate zucchini and flavorful smoked salmon make it irresistable and perfect for any occasion: a holiday party, buffet table or a usual everyday lunch or dinner. I use ready-made shortcrust pastry for this pie, so it's super quick and easy to make. Enjoy it!
To make snoked salmon and zucchini pie you need:
- 250g (9oz) ready-made salty shortcrust pastry
- 300g (10oz) zucchini
- 100g (4oz) smoked salmon
- 3 eggs
- 100ml (3fl oz) fresh cream
- 50g (20z) grated cheese
- salt, black pepper
Grate zucchini with skin (use a grater with large holes)
Add grated cheese
Add fresh cream, eggs, salmon (cut in small pieces), smoked salt and black pepper
Stir well
Place the shortcrust pastry in a baking form and pour the filling on top of it
Preheat the oven to 180C/356F and bake the quiche for 30-40 minutes until the pastry becomes golden brown. Let it cool a little, cut in slices and enjoy it :-) Than you for your visit!
