Italian baked rice casserole (Timballo di riso)

Timballo di riso is one of traditional Italian rustic dishes. It has a lot of varieties, but the most popular one is made with minced meat, mozarella and tomato sauce. This dish is very rich in taste, flavorful and original. Give it a try - you'll love it! Tastes even better if cooked one day ahead.

To prepare Italian baked rice casserole you need:

  • 400g (14 oz) rice
  • 250g (9 oz) mozarella
  • 200g (7 oz) minced meat (pork or beef)
  • 150g (5 oz) frozen or fresh peas
  • 2 tbsp grated cheese
  • salt, black pepper
  • 1 litre (4 cups) tomato sauce
  • 200g (7 oz) ham
  • 1 carrot
  • 1 onion
  • 2 boiled eggs

Boil the peas for 5 minutes


Combine the chopped onion and carrot with the minced meat and cook the mixture in some oil for 10 minutes


Add tomato sauce and go on cooking for 15 minutes


Add the peas


Cut the ham in small pieces


Cook the rice


Combine the rice with the meat and tomato sauce mixture


Cut the boiled eggs in cubes and add them to the rice


Add mozarella, grated cheese, salt, black pepper and mix well


Grease a baking form with some oil and put the rice and meat mixture in it


Preheat the oven to 180C/356F and bake timballo for 30 minutes
