Tuna and potato balls recipe

These tuna and potato balls are very versatile: they can be served as a starter or can be used as a main dish. Good as food for kids too!  They are very light, nutritious and delicious. The center is very delicate and soft and the coating is slightly crunchy.

You need:

- 300g (11 oz) potatoes
- 150g (5 oz) canned tuna
- 1 egg
- 2tbsp finely chopped fresh parsley
- salt, pepper
- oil
- bread crumbs

Prepare the mashed potatoes

Combine the potatoes puree with tuna, parsley, egg, salt, pepper and 3tbsp bread crumbs

Mix well to get a soft and smooth pastry

Wet your hands and make a lot of small balls of a walnut size

Coat the balls in bread crumbs

Place them onto an oven tray, sprinkle some oil on top and bake for 20 minutes at 180C/350F until golden brown color

Serve them warm with some fresh salad. Buon appetit:-)
