Easy pumpkin muffins recipe


After the pumpkin bread recipe I'd like to share with you a recipe of super tasty and flavorful pumpkin muffins. They are great for breakfast or tea time. A gentle taste of a pumpkin and the mixture of cinnamon and cardamom make them really irresistible. And the turmeric powder makes them healthier and gives them a sunny yellow color. The muffins are super soft and delicious. Give them a try :-) 

You need:

  • 250g (9 oz) pumpkin (I use frozen pumpkin)
  • 150g (5 oz) plain flour
  • 60ml (3tbsp) milk
  • 1/4tsp cinnamon powder
  • 1/4tsp cardamom powder
  • 1/4tsp turmeric powder
  • 15g (1tsp) baking powder
  • 1 lemon zest
  • 1 orange zest
  • 2tbsp sunflower oil
  • 100g (1/2 cup) brown sugar
For the fudge icing: 
  • 150g (5 oz) butter
  • 250g (9 oz) powdered sugar
  • 1tsp lemon juice  


Cook the pumpkin (I use a steam cooker, but you can also boil it or bake it in the oven)


Combine the flour, sugar, baking powder, spices, lemon and orange zest


Blend the cooked pumpkin to make a puree


Add the mashed pumpkin to the flour mixture


Stir well to get a smooth mixture


Pour the mixture in the muffin forms (the cakes will grow, so fill the forms just 1/2 full)


Preheat the oven to 200C/400F and bake the muffins for 20 minutes


In the meantime prepare the icing: melt the butter


Add the powdered sugar and lemon juice and mix well


Pour 1tbsp of the icing on top of each cupcake and decorate them with some powdered chocolate or cocoa powder
