Lemon shortbread biscuits recipe

Try to make these tasty homemade lemon biscuits. They are a perfect match with a cup of tea! Easy to prepare and really really delicious:-)

We need:

- 320g (11oz) plain flour

- 150g (2/3 cup) soft butter
- 1 egg
- zest and juice of 1 lemon
- 90g (3oz) sugar
- 8g (1/2tsp) baking powder

Beat the butter and sugar together until smooth. 

Add an egg, lemon juice and zest, flour, baking powder and squeeze the mixture together in order to get a ball of dough. 

Put it in the fridge for 1 hour. Then divide the dough in many small balls of a walnut size, put them on a baking tray and flatten them with your hand.  Preheat the oven to 180C/350F.

Bake the biscuits in the oven for 15-20 minutes. Put aside to cool and prepare a cup of tea in the meantime:-)
