Chicken and sweet pepper stew recipe



This tasty chicken and sweet pepper stew makes for a perfect dinner meal for the whole family. It will warm you up in cold evenings:-) It's quick and easy to cook, healthy and delicious:-) Then, this plate is light and nutritious at the same time. Try it and you'll love it!

You need:
- 300g (10 oz) chicken breast
- 1 carrot
- 1 sweet pepper
- 4-5 potatoes
- 2 fresh tomatoes
- 1 onion
- 1 liter (34 fl oz) water
- salt, black pepper 
- some fresh parsley


First of all, roast the pepper. Preheat the oven to 200C.  Wash the pepper and wrap it in aluminum foil


Roast it for 40 minutes until it becomes soft


Remove it from the oven, let it cool a little, cut it into quarters and remove the seeds and the skin (it will come off easily once the peppers are well baked) and cut it into small pieces


Chop the onion and carrot and fry them in some oil for 3 minutes


Add the chicken breast (chopped) and cook for another 5 minutes stirring all the time


When the chicken becomes white add water (it must cover the meat) and cook for 15 minutes

In the meantime cut the potatoes and tomatoes


Add the potatoes, tomatoes and sweet pepper to the meat


Cook for 20 minutes until the potatoes are ready

 
 Add some salt, black pepper and parsley. Enjoy it:-) Bon apetit!
