My son adores meatballs so I always try to invent new versions of this dish. Here is one of my family's favorite plates - pumpkin meatballs in a red sauce, loved by kids and adults. Easy to make, original and yummy. Perfect for both lunch and dinner. Bring a little of Italy to your table :-) Buon appetito!
To make pumpkin meatballs in a red sauce you need:
- 500g (18oz) minced meat of your choice (I used minced veal)
- 150g (5oz) pumpkin
- 1 egg
- bread crumbs
- 1 onion
- 1 carrot
- celery
- 1 red bell pepper
- 1,5 cup tomato sauce
- salt, black pepper
- oil
Wrap the bell pepper in alluminum foil and bake it at 200C/392F for 1 hour, leave it wrapped until it's completely cold and then peel it. Blend it using a food processor to get a puree. Leave it aside
Put the minced meat, half onion and pumpkin together and blend them using a food processor or a meat mincer
Add 1 egg, salt, black pepper and bread crumbs (add as much as needed to get a smooth meat mixture that keeps together)
Make a lot of meatballs of a walnut size and fry them (2 minutes for each side) in oil
Cut half onion, carrot and celery in small pieces and fry them in some oil for 5 minutes
Add tomato sauce and bell pepper puree and let the mixture boil
As soon as the sauce starts boiling put the meatballs in it, cover with a lid and cook for 20 minutes over a low fire. Add some salt and black pepper
