Khachapuri recipe

egg and cheese bread recipe

Khachapuri is a typical Georgian cheese-and-egg bread. The real Georgian khachapuri is made with sulguni cheese that is impossible to find in Italy. So I've adapted this recipe to Italian ingredients. The result is simply amazing! Try it and you'll fall in love:-)

To make 5 khachapuri you need:

  • 300g (11 oz) self-raising flour
  • 200g (7 oz) plain yogurt
  • 7g (1,5tsp) dried yeast
  • 20g (1tbsp) soft butter
  • 1tsp salt
  • 1tsp honey
  • 50ml (2tbsp) warm milk
  •  2 eggs
  • slices of parmesan cheese
  • stracchino or teleme cheese
  • oil
  • salt, black pepper

Combine the flour, salt and butter


Mix well


Add the yogurt, milk, yeast and honey


Knead the dough and leave it grow for 3 hours in a warm place


Divide the dough in 5


Roll out each piece of dough


Then roll the dough up towards the center from both sides


Pinch the ends together to give it a form of a boat


Place the ''boats'' on the baking tray covered with a parchment paper


Put some slices of parmesan in each ''boat''


Put 2tbsp of teleme or stracchino cheese in each ''boat''


Beat the eggs with a fork


Pour them on top of the teleme cheese


Add some salt and black pepper


Preheat the oven to 190C/350F and bake khachapuri for 25 minutes


Let them cool just a little and enjoy them, yummy...
