Red cabbage risotto recipe

red cabbage risotto recipe

This risotto is great for cold days. It's flavorful, delicious and very delicate. Red cabbage gives it its particular color and taste making it really irresistible:-)

You need:

- 300g (10 oz) red cabbage
- 3cups rice
- 1 onion
- 1/2cup white wine
- water
- 1tbsp butter
- grated parmesan
- sunflower oil
- salt, pepper

Chop the onion and fry it in some oil

Shred the cabbage

Add it to the onions

Cook it for 10 minutes on low heat

Add the rice to the mixture of cabbage and onion, mix well and cook for 2 minutes

Pour the white wine on top of the rice and cook it until the wine evaporates

Add some water (it should cover the rice), salt and pepper and cook until the rice soft (approximately 15 minutes). Add more water if necessary

When the rice is cooked remove the rice from the fire and add the butter and grated parmesan. Stir well
