Marinated grilled eggplant recipe

Here is an easy way to prepare marinated grilled eggplant. It's quick to make, healthy and really delicious. All you need is a grill pan and some simple ingredients. If you'd like to prepare some quick and tasty appetizer this recipe is for you:-)

You need:

- 1 big eggplant
- 1 garlic clove
- 1 tbsp vinegar
- 1/2tsp salt
- some fresh parsley
- olive oil
- black pepper


First of all it is necessary to take off the bitterness from the eggplant: slice it and sprinkle some salt on both sides of the slices. Leave it for 30 minutes


Rinse the eggplant slices under cold water and squeeze them slightly to take off the liquid


Preheat a ridged grill pan over a medium heat. Brush the eggplant slices with some olive oil and cook them for 4 minutes (2 minutes from each side)

 

Prepare the dressing: mix together the oil, vinegar, mashed garlic, olive oil, salt, black pepper and parsley


Place some grilled eggplant slices in a bowl and put a little of dressing on top


Go on doing like this until you finish all the eggplant slices


Let the eggplants stand for at least 30 minutes before serving. Bon appetit:-)
