An easy eggplant cream recipe

Back to healthy food:-) This eggplant cream is one of my favorites, it's light, easy to make and really delicious. Then, it has a lot of health benefits: eggplants are full of vitamins (like B1, B6 and potassium), minerals (copper, magnesium and manganese) and dietary fiber. A perfect choice for a healthy snack! This cream can be served as a starter or can be used as a sauce for pasta, it's just yummy in any way:-)

You need:

-1 big eggplant
- 1 garlic clove
- 4tbsp olive oil
- 2tbsp grated parmesan
- salt

Cut the eggplant in half lengthwise and place it onto a baking sheet with the skin side up. Prick it with a fork

Preheat the oven to 200C/400F and roast the eggplants for 40 minutes until very tender and golden brown

Scoop the eggplant flesh and combine it with garlic, olive oil and parmesan. Blend it with a blender

Add some salt and serve it as a delicious appetizer

Or as a sauce for pasta. Buon appetit:-)
