Pumpkin and ham rigatoni recipe

Time of pumpkins is coming! If you like pumpkins like me try to prepare this pumpkin pasta. Simple and delicious:-)

You need (for 4 portions):

- 350g (12oz) rigatoni pasta
- 200g (7oz) baked ham (chopped)
- 200ml (7 fl oz) fresh cream
- 1 little leek (finely chopped)
- 200g (7oz) diced pumpkin

First of all prepare the pumpkin puree: place the diced pumpking in a pan with just enough water to cover it, bring to boil and leave it boiling until soft. (You can use frozen pumpkin)

Blend the cooked pumpkin together with the water. 

Heat some oil in a large frying pan, add the leak and cook for 4-5 minutes.

Add the baked ham and cook for 3 more minutes.

Stir in the pumpkin puree and cook  for about 5 minuts (until half of the liquid evaporates).

In the meantime cook rigatoni pasta

Add fresh cream to the pumpkin and ham mixture and cook for another 3 minutes, add some salt and black pepper.

Combine rigatoni with the sauce and serve. Bon appetit:-)
